Balsamic Traditional Vinegar of Modena DOP 

 

We take care of more than 3 thousand barrels, that accommodate inside the Balsamic Traditional Vinegar of Modena DOP

The barrels for aging shall be made of different woods and placed in a battery by descending order, from the biggest to the smallest one.

For the Balsamic Traditional Vinegar of Modena DOP, aged 12 or 25 years, only specific types of wood can be used to realize the barrels that drive its aging: cherry wood, chestnut, durmast, mulberry, acacia and juniper wood.

Each type of wood gives the Vinegar, over years, a different essence: 

  • The Chestnut, thanks to being rich in tannins, gives a dark colour to the Vinegar it contains 

  • The Cherry wood fills its “guest” with soft, delicate, but persistent at the same time, scents typical of the fruit itself 

  • The Juniper wood, whose strong aromatic essence deeply penetrates into the product lending an absolutely particular, very tasty fragrance to it 

  • The Mulberry, has always been used by the Modenese vinegar producers for its exceptional malleability and resistance over time 

  • The Durmast, known for its hardness and resistance against bad weather  

  • The Acacia is a wood with a strong essence, a yellow reddish colour and a thin and compact fibre, highly resistant against humidity 

Each barrel has got its own history, its own origin: we even have one dating back to the Napoleonic period. 
It is a family tradition to dedicate, to every “heir”, a battery of barrels bearing the name of the person to which it is dedicated and transmitted as heritage. 

By the way: did you know that?
The tradition (still existing) says that at the birth of every heir a new battery of barrels is placed that, after 25 years, will become the dowry of each bride for her marriage.      

 

Balsamic Vinegar of Modena   


The maturation of the Balsamic Vinegar of Modena is realised using the must of those grapes permitted by the production specification and aged wine vinegar produced by us. It happens inside vats and barrels created by cooper artisans with precious Italian Durmast wood. The Durmast wood is ideal for the maturation of this product: thanks to its characteristics of hardness and resistance, it guarantees an excellent ageing of the Balsamic Vinegar of Modena IGP. 

 

Dark Condiments

In addition to our Traditional Balsamic Vinegar of Modena DOP and our Balsamic Vinegar of Modena, we also realise a new series of Dark Condiments that mature and improve inside Durmast barrels, with a capacity of 220 litres each. Inside these small wooden barrels, our Condiments, obtained from cooked must of Trebbiano and Lambrusco grapes produced by us, age for many years until they reach that density that makes them so versatile in cooking. 

 

Wine Vinegar 

Our Wine Vinegar aged in Durmast barrels is obtained from noble wines aged for many years inside big wooden barrels, thus guaranteeing a soft, persistent and delicate maturation.
