It is harvest time

In these days we are harvesting the grapes in the family vineyards, which are located in Modena at our Tenuta Del Cigno farm . Here five hectares of land are dedicated to the cultivation of Lambrusco di Modena (red grapes), Trebbiano di Spagna and Trebbiano di Modena (white grapes) which will then be used for the production of cooked must, the only ingredient of Balsamic Vinegar Traditional of Modena DOP.

The harvest represents a very intense and evocative moment: the whole family gathers to pick by hand, as in the past, one bunch at a time. It is very important, in this phase, however, to respect the ripening times of the grapes that can be harvested only when they have reached the right degree of ripeness.
